  • 2 medium sweet potatoes, diced

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups spinach, chopped
  • Fresh parsley for garnish

Instructions

  1. Heat oil in a skillet over medium heat. Add chopped onion and minced garlic. Cook for 2-3 minutes until the onion is translucent.
  2. Add diced sweet potatoes to the skillet. Cook for 10 minutes, stirring occasionally, until the potatoes start to soften.
  3. Incorporate ground turkey into the skillet. Break apart the meat and cook for 5-7 minutes until it is browned.
  4. Sprinkle in smoked paprika, cumin, salt, and pepper. Mix well to combine the flavors.
  5. Add the chopped bell pepper and spinach. Cook for an additional 3-4 minutes until everything is tender. Garnish with fresh parsley before serving.
