A hearty and comforting dish featuring juicy steak, creamy cheese, and fluffy rice, perfect for a filling meal any night of the week.


Ingredients

  • 450g (1 lb) flank or sirloin steak
  • 1 tsp paprika
  • A sprinkle of salt and pepper, to taste
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1½ cups whole milk
  • A pinch of salt and pepper, to taste
  • ½ tsp ground cumin
  • 2 cups cheddar cheese, shredded
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, chopped finely
  • 1 cup Monterey Jack cheese, shredded
  • 2 cups broth (or water)
  • A bit of salt, as needed
  • 1 cup long-grain white rice
  • Fresh cilantro, chopped, for serving
  • Wedges of lime, for serving
  • Slices of avocado, for serving
  • Cut jalapeños, for serving

Instructions

  1. Make the queso: Melt butter in a skillet, add minced garlic, and cook until fragrant. Stir in milk and bring to a light simmer.
  2. Cook the rice: Rinse rice under cold water, heat olive oil in a pot, stir in rice and garlic powder, toast for a couple of minutes, then add broth or water. Bring to a boil, cover, and simmer on low for 18-20 minutes.
  3. Rest and slice the steak: After cooking, let the steak rest for 5-10 minutes before slicing into thin strips.
  4. Prepare the steak: Rub the steak with olive oil and season with paprika, cumin, garlic powder, salt, and pepper.
  5. Finish the queso: Gradually stir in shredded cheeses until melted and smooth, seasoning with cumin, chili powder, salt, and pepper.
  6. Add the toppings: Serve with fresh cilantro, jalapeños, avocado, and lime.
  7. Cook the steak: In a hot skillet, cook the seasoned steak for 4-5 minutes on each side to desired doneness.
  8. Put it together: Serve rice on plates topped with steak strips and drizzle the warm queso over everything.

Notes

For a spicier version, add chipotle peppers to the queso or use spicy cheese blends. Customize toppings for personal preference.
