A warm and comforting Slow Cooker Chicken Cacciatore featuring tender chicken breasts simmered in a rich tomato sauce with aromatic herbs.
Ingredients

- 2 cloves Garlic (minced)
- 1/2 large Onion (diced)
- 1 large Red bell pepper (diced)
- 1 14.5 oz can Diced tomatoes (drained)
- 1 tbsp Fresh rosemary (chopped)
- 1 tbsp Fresh thyme (chopped)
- 4 medium Boneless skinless chicken breasts
- 1 tsp Sea salt
- 1/4 tsp Black pepper
- 1 medium Bay leaf
Instructions
- Season the chicken breasts on both sides with salt and pepper. Place the chicken into the slow cooker.
- In a medium bowl, stir together the garlic, onion, bell peppers, diced tomatoes, rosemary, and thyme. Pour the sauce evenly over the chicken.
- Place a bay leaf in the center.
- Cover and cook for 3 to 4 hours on high or 6 to 8 hours on low.
- Serve right away. If you prefer a thicker sauce, remove the chicken and cook the sauce for an additional hour in the slow cooker on low.
Notes
Feel free to add more vegetables like mushrooms or spinach for additional nutrition.
