- 1 1/2 cups (190g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2/3 cup (160ml) vegetable oil
- 2 large eggs
- 2/3 cup (160ml) buttermilk
- 1 tbsp red food coloring
- 1 tsp vanilla extract
- 1/2 tsp white vinegar
- 10 crushed Oreo cookies
- For the frosting: 1/2 cup (115g) unsalted butter, 8 oz (225g) cream cheese, 2 cups (240g) powdered sugar, 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease two 6-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, mix the oil, eggs, buttermilk, red food coloring, vanilla, and vinegar until smooth.
- Gradually add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the crushed Oreos gently.
- Divide the batter evenly between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat butter and cream cheese together until creamy. Add powdered sugar and vanilla, then mix until smooth.
- Frost the cooled cakes and decorate with additional Oreo crumbs if desired.
Notes
- Use gel food coloring for a more vibrant red color.
- Don’t overmix the batter to keep the cake tender.
- Cakes can be made ahead and frozen unfrosted for up to 2 weeks.
