Ingredients

  • 1 lb lean ground beef
  • 2 tablespoons vegetable oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 2 medium carrots, quartered and sliced
  • 4 cups low-sodium beef broth
  • 3 (8 oz) cans tomato sauce
  • ½ cup uncooked white rice
  • 1 bay leaf
  • 3 tablespoons light brown sugar
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a Dutch oven or large soup pot over medium-high heat.
  2. Add lean ground beef and season with salt and pepper. Cook until browned.
  3. Add diced yellow onion and minced garlic. Cook for 2-3 minutes until tender.
  4. Add chopped cabbage and sliced carrots to the pot, stirring to combine.
  5. Pour in beef broth, tomato sauce, and add uncooked rice, bay leaf, and brown sugar. Stir well.
  6. Bring to a gentle simmer and cook for about 25 minutes until the rice is tender.
  7. Remove bay leaf, sprinkle with fresh parsley, and serve hot.
