- 1 lb lean ground beef
- 2 tablespoons vegetable oil
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 4 cups green cabbage, chopped
- 2 medium carrots, quartered and sliced
- 4 cups low-sodium beef broth
- 3 (8 oz) cans tomato sauce
- ½ cup uncooked white rice
- 1 bay leaf
- 3 tablespoons light brown sugar
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a Dutch oven or large soup pot over medium-high heat.
- Add lean ground beef and season with salt and pepper. Cook until browned.
- Add diced yellow onion and minced garlic. Cook for 2-3 minutes until tender.
- Add chopped cabbage and sliced carrots to the pot, stirring to combine.
- Pour in beef broth, tomato sauce, and add uncooked rice, bay leaf, and brown sugar. Stir well.
- Bring to a gentle simmer and cook for about 25 minutes until the rice is tender.
- Remove bay leaf, sprinkle with fresh parsley, and serve hot.
