  • 1/4 cup unsalted butter
  • 3 cloves garlic, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1.5 teaspoons salt
  • 1 tablespoon chopped flat-leaf parsley
  • 2 teaspoons flaky salt
  • Zest of one lemon

Instructions

  1. Wash and scrub the potatoes until clean, then dry completely.
  2. Cut the potatoes into equal-sized chunks.
  3. Melt the butter in a saucepan over low heat, then add the chopped garlic and sauté gently.
  4. Drizzle the garlic butter over the potato chunks, adding lemon juice and salt. Mix thoroughly.
  5. Preheat oven to 400°F (200°C) and spread the potatoes on a lined baking tray in a single layer.
  6. Roast for 45-50 minutes, turning halfway through until crispy and golden.
  7. Once done, sprinkle with parsley, flaky salt, and lemon zest before serving.

Notes
