- 3 cloves garlic, finely chopped
- 1 tablespoon fresh lemon juice
- 1.5 teaspoons salt
- 1 tablespoon chopped flat-leaf parsley
- 2 teaspoons flaky salt
- Zest of one lemon
Instructions
- Wash and scrub the potatoes until clean, then dry completely.
- Cut the potatoes into equal-sized chunks.
- Melt the butter in a saucepan over low heat, then add the chopped garlic and sauté gently.
- Drizzle the garlic butter over the potato chunks, adding lemon juice and salt. Mix thoroughly.
- Preheat oven to 400°F (200°C) and spread the potatoes on a lined baking tray in a single layer.
- Roast for 45-50 minutes, turning halfway through until crispy and golden.
- Once done, sprinkle with parsley, flaky salt, and lemon zest before serving.
Notes
For extra crispiness, consider broiling the potatoes for the last 2-3 minutes of cooking. You can also experiment with adding cheese or other spices as desired.
